It is all too often that I find myself getting caught up in the daily routine of hourly conference calls, school activities, followed up by juggling the kids athletic after school activities. That on most occasions leaves me forgetting about fueling myself with lunch and sometimes dinner. Put those two together, an empty belly and busy person, and you have yourself an unhappy person.
Eating healthy has been a motto of mine for the past year and half, so I have never been a fan of the easy microwave dishes, due to the high sodium content. That all changed when I was introduced into the meals by Luvo. A quick glance at their website and you will find that they have quite the variety. I like the fact that they have bundles that you can try without the hassle of having to choose individual meals. The Quinoa & Veggie Enchilada Verde is a true vegetarian bowl the provides a delightful mix of veggies and citrus flavors. I truly enjoy the plentiful addition of corn and bell peppers that give this dish that extra pop. Each meal is hand crafted to provide a healthy alternative to all those other frozen meals on the market today. Low in sodium (360mg) while providing a full cup of vegetables. As I mentioned before this is a vegetarian dish, so on occasion I would add grilled chicken breast depending on how famished I was feeling.
The Chicken Chorizo Chili, by far was my favorite, provided just enough spice to satisfy my palate. Chili is my go to during the fall months and this dish allowed me to have a bowl in front of me within 5 minutes. Again low in sodium (340mg) with enough protein (18g) to get me through those days of dreaded conference calls. The addition of Kale to this chili was a special surprise and an ingredient that I would have never thought to include in my homemade chili.
Being super busy and only having a few minutes in between conference calls the quick preparation allows me to prepare a healthy meal and get right back to work. Luvo meals have become a staple in our household for the entire family to enjoy and cost less than your average fast food combo meal.
